Chocolate Pecan Pie
Description: Very decadent, rich and delicious. I often make this for entertaining at Christmas. Nice with a little dollop of whipped cream.
Ingredients:
- 3 eggs, slightly beaten
- 1 cup corn syrup
- 4 ounces semisweet chocolate, melted and cooled slightly
- 1/3 cup sugar
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 1/2 cups pecan halves
- 1 unbaked 9-inch pie shell
Steps:
- In a large bowl, stir eggs, corn syrup, chocolate, sugar, butter and vanilla until well blended.
- Stir in pecans.
- Pour into pastry shell.
- Bake at 350°F for 50 - 60 minutes or until knife inserted halfway between the edge and centre comes out clean.
- Cool on wire rack.
