Gluten-Free Morning Glory Muffins
Description: A combination of tastes to fill your mouth. Quick and easy. For vegan, use egg replacer of choice for eggs.
Ingredients:
- 1 cup gluten-free flour
- 1 teaspoon xanthan gum
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/8 cup sucanat
- 1/4 cup unsweetened coconut
- 1 cup carrot, grated
- 1/4 cup raisins
- 1 small mcintosh apple, diced
- 2 eggs
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla
- 1 teaspoon orange extract
- 1/4 cup soymilk
Steps:
- Preheat oven to 350°F.
- Mix dry ingredients.
- Mix wet, then add into dry.
- Fill cups to about 2/3 cup full.
- Bake for about 22 minutes.
