Apple Slaw
8 one-cup servings

Dressing ingredients:

1/3 cup packed brown sugar
1/3 cup cider vinegar
1 1/2  tablespoons vegetable oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper


Slaw ingredients:

2 1/2  cups chopped Golden Delicious apples ( or Pink Lady Apples)
1 (12 ounce) package broccoli slaw
1/2 cup Jicama, peeled and diced
2 tablespoon unsalted sunflower seed kernels


Directions:

1. To prepare dressing: combine first 5 ingredients in  a small bowl, stirring well with a whisk.

2. To prepare slaw: combine apple,  broccoli slaw, and Jicama.  Drizzle with dressing and toss well.  Sprinkle with sunflower seeds, chill for 3 to 8  hours.
