Avocado Salsa
Makes 1 1/2 cups

Ingredients:

1 ripe avocado
1 jalapeno, stemmed and quartered
1 cup water
1 tablespoon white distilled vinegar
3/4 teaspoon salt
2 tablespoons minced fresh cilantro
2 tablespoons diced onion

Directions:

Combine avocado, jalapeno, water, vinegar and salt in a food processor.

Puree the mixture for several seconds on high speed, or until jalapeno is finely minced. Pour mixture into a medium bowl. Stir in cilantro and onion. 

Cover and chill until ready to serve.
