Rhubarb Cake
1 cup sugar
1/2 cup shortening
2 cup chopped rhubarb
1 cup buttermilk or *sour milk
1 tsp. soda
1/2 tsp. baking powder
1 tsp. vanilla
2 cup flour
1 tsp. salt

Cream shortening and sugar. 
Add remaining ingredients.  Mix well.
Pour into greased 9x13 pan. 
Sprinkle with 1/4-cup sugar mixed with cinnamon (to taste).  Bake at 350 degrees for 25 to 30 minutes. 
May be served warm with cream or ice cream. 

*To make sour milk, pour 1-tablespoon vinegar in cup, add milk to make 1 cup.  Let stand about 5 minutes.
