Spinach Mushroom Salad
Serves 8

Ingredients:

1 pkg. (10 oz.) spinach leaves, torn into bite-size pieces.

2 cups Pepperidge Farm(R) Generous Cut Sourdough Cheese Croutons

2 cups sliced mushrooms

6 slices bacon, cooked and crumbled

1 medium red onion, thinly sliced

2 hard-cooked eggs, sliced

3/4 cup vegetable oil

3 tbsp. vinegar

2 tsp. sugar

1/2 tsp. dry mustard


Directions:

Toss spinach, croutons, mushrooms, bacon, onion and eggs in large bowl.

Mix oil, vinegar, sugar and mustard in small saucepan. Heat through.

Add to spinach mixture and toss until evenly coated.

*To microwave dressing, mix oil, vinegar, sugar and mustard in 1-cup microwave-safe measuring cup. Microwave on HIGH 1 min. or until hot.
