Mushroom-stuffed beef roast

Ingredients:

� � 1 � � � Kg � � � � � � ��Beef eye of round roast.

150 � � � g � � � � � � � � �Fresh mushrooms, Finely chopped.

1/4 � � � cup � � � � � � ��Water.

1/4 � � � teaspoon � � � �dried dillweed or fennel seed, crushed.

100 � � � g � � � � � � � � �Chopped onion.

1/2 � � � cup � � � � � � � �yogurt.

�20 � � � �g � � � � � � � � � flour.

Salt an pepper( seasoning)

1/2 � � � �cup � � � � � � � beef stock.

Procedure:

-Trim excess fat from roast.Then cut 8 evenly spaced crosswise slits in roast making each 3inces deep

-For filling, in medium saucepan saute the onion,mushroom,dillweed,fennel seeds,salt and pepper for 15 min

-Spoon filling into slits in roast.

-Place roast in a shallow roasting pan and bake in a 325 C oven for 1 1/2 hours or till meat thermometer register 140c.

Remove from oven keep warm

-For sauce, in a small saucepan stir together yogurt,flour, and pepper.Stir in beef stock. Cook and stir over medium heat till thickened and bubbly. Then ,cook snd stir for 1 min mor.

to serve, slice meat between filled slits and serve with sauce
