Chicken Fried Steak
This is one of his most asked for main dish
1 pound top sirloin steak, pounded with a meat tenderizer
1 garlic clove cut in half
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
1/3 cup all purpose flour
Mazola oil for frying
Rub the steak with the garlic half, discard the garlic.
Sprinkle the meat with the salt, pepper, and onion powder. Place the flour
on a plate and dredge both sides of the steak with it. Shake the excess
flour from the steak.
Heat the oil in an iron skillet, using enough to cover
the steak. When the oil is about 350 F,
throw in the steak. Fry until brown and turn to brown
other side.
Until well done. Remove to warm platter.
At Graceland they used a diamond-shaped meat tenderizer.
