At Graceland ~ Roast beef was always fixed in a skillet...And Elvis always had the cooks cut it up for him.
Roast Beef

1   5-8-pound standing rib roast
2 garlic cloves, halved
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon vegetable oil
3 medium onions, quartered

Preheat the oven to 300 degrees F.
Rub the roast with the garlic cloves and sprinkle
with the salt and pepper. Heat the oil in
a large, heavy, ovenproof skillet over high heat
and brown the roast very lightly on all sides.
Add the onions and cover with a large piece
of foil.
Roast 23 to 25 minutes per pound for well done.
Let the roast sit for 10 minutes before carving.
