Lad Na Neu Sup

1 lb. ground pork or turkey
2 large ripe tomatoes
1 large yellow onion
3-4 cloves garlic, chopped
Madras curry powder
1-2 tablespoons corn starch
1 bag wide rice noodle, soaked
sweet black soy sauce
lettuce
sugar
fish sauce

In a large skillet or frying pan brown the garlic
and add in the meat. Break the pork or turkey as it
cooks, adding in approximately 2-3 tablespoons of
curry powder (meat turn yellow and fragrant).

Cut tomatoes and onion into bite size pieces and
add to pan. Once meat mixture starts to turn juicy,
add in approximately 1/2 cup sugar and 2-3 tablespoons
fish sauce. Should be slightly sweet and salty.

Dilute cornstarch in enough water to make a slightly
thick paste. Add to meat mixture, stirring constantly
until as it thickens.

In a large skillet or frying pan, heat about 2-3
tablespoons cooking oil or sesame oil.
Drain rice noodles and place in heated pan.
Pour in about 3-4 tablespoons of the sweet soy sauce.
Mix well, stir constantly to avoid sticking and burning.
When noodles soften, remove from heat and place on a
large serving dish.

To serve, lay a bed of lettuce and noodles
on a plate and ladle sauce on top.
Add fish sauce and sugar as necessary.
Pickled hot pepper is optional.
