Tuptim Grob

1 cup water chestnuts, cut into small cubes
1/2 cup Singapore flour
150 grams sugar
3/4 cup water for syrup
3/4 cup coconut milk
crushed ice
red food coloring

1. Soak the water chestnut in enough red food coloring until the color is picked up. Drain. Cover with the flour and shake off excess flour in a strainer.

2. Boil 5 cups of water and carefully place in the floured water chestnuts and boil for about 3 minutes. Remove from pot with a slotted spoon and soak in ice water, remove and drain.

3. Mix syrup with coconut milk. When ready to serve, in a cup place the pomergranite seeds, crushed ice and sweetened coconut milk together.
