Lo Mai Kai ( Glutinous Rice Chicken )

Ingredients

42 oz glutinous rice
1 lb chicken meat
20 dried shiitake mushrooms, re-hydrated
3 tsp salt
3 tsp chicken stock, granulated {msg was what she used}
2 tsp sugar
3 tbsp soy sauce, light
2 tbsp & 2 tsp soy sauce, dark
4 tsp sesame oil
1 tsp white pepper
8 tbsp oil {lard was what she used}
water
1 tbsp corn starch

Method

1. Wash and soak the glutinous rice for an hour. After soaking, drain the rice and add 2 tsp salt, 2 tsp granulated chicken stock, 1 tsp sugar, 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 3 tsp sesame oil and 1/2 tsp white pepper.
2. Fry the rice in a wok, add a few tablespoons of water, stir and cover. Repeat process until you use about 3-4 cups of water. Rice will cook in process. Set aside.
3. Slice the chicken and mushrooms into strips. Add in 1 teaspoon salt, 1 tsp chicken granules, 1 tsp sugar, 1 tbsp soy sauce, 2 tsp dark soy, 1 tsp sesame oil, 1 tbsp corn starch, 2 tbsp water, and 1 1/2 tbsp oil. Mix and stir fry in pan.
4. To steam, place the chicken mushroom mixture in first, then top up with the glutinous rice mixture. Steam for about 20 minutes.
