Important Note: When you are breeding, or anything, REMEMBER TO SAVE!!!! Not only could you screw something up and have to start over, but breeding takes a long time and you wouldn't want a power outage to wipe out a whole day's work...
When you can start

You can only start to breed chocobos when Cid is the team leader in Disc 2, right after you get Cloud back, or before you enter the North Cave. It's better to start after you get Cloud back, because the Gold Saucer is closed when Cid is leader.

Preparations
For Breeding Chocobo's you will need:
*6 stalls from the Chocobo Farm
*3 Carob Nuts
*1 Zeio Nut
*10-25 Sylkis Greens Note: Costs 5000 gil each!
*1 Great Female Chocobo
*1 Good Male Chocobo
*1 Good Female Chocobo (optional)
*1 Great Male Chocobo (optional)
*1 Mastered "All" Materia (To sell for 1,400,000 gil. Optional... do this if you want money to buy all 6 stalls and to buy the Sylkis Greens at 5,000 each...)
*How to get 6 stalls
Ask Choco Bill at the Chocobo Farm to take care of your chocobos. You need 60,000 gil for 6 stalls, so be sure you have that much money before you come here. It should be easy to get this much money this late in the game (or if you fight lots of battles and train up a lot... when my boyfriend and I played Final Fantasy vii through again at the end of the game we had 32 million Gil, and our characters at level 99)

How to get 3 Carob Nuts
Go to the northern continent, and near the east side of it, you'll find a little house with a tiny patch of grass surrounding it. (This is the house of the Chocobo Sage, who will give you hints regarding chocobo breeding.) Land, and run around on the grass until you find a Vlakorados, the red dragon-like monsters. You'll find the mole things most of the time, but you can easily kill them. Use the "Steal" command on the Vlakorados, and you can get one Carob Nut. After you get one, run away (or fight it if you want to) However, You won't get much Exp, Ap, or Gil for these battles, its probably quicker to steal then run away... Do this 3 times.

How to get a Zeio Nut
Turn on the big map, and then you can see a couple small islands in the ocean in the north-east. Go there, and steal from Goblins. You get one Zeio Nut from killing a Goblin, and one from stealing. Steal and run, or stay and kill the monsters.

How to get a Sylkis Green
Go to the Chocobo Sage's house (the one on the Northern Continent with a patch of grass around it). You'll find a creature, the Chocobo Sage himself, in there. First, go to the green chocobo to get an "Enemy Skill" materia. Then talk to the Sage and buy 10 Sylkis Greens.

You can also start out with one or two Sylkis Greens and obtain as many as you need by using the W-Item Dupe Trick.(see cheats page for information on the W-Item Duplication Trick)

There are actually around 6 types of chocobos that Choco Billy rates. You need to get 1 Great Female, and 1 Good male. When you see one, give it a cheap 100 gil green, and kill off all the enemies around the chocobo. Never hit the chocobo. After you get one, get off it by pressing X and then send it back to the stables.

Back at the Chocobo Farm, go to the barn and talk to Choco Billy. Choose "Moving Chocobos" in his list and then you can move your chocobos into the barn so you can feed them, mate them, or whatever.

Getting a Wonderful Chocobo
Most of the time, you'll find a low-quality Chocobo there. There's an easier way to check if you've got a Wonderful Chocobo. The fight must have two Jumpings with the Chocobo, one on each side of it. This kind of fight is extremely rare, so if you can get an Encount Up materia along with a matersted Chocobo Lure, it'll help you.

Feeding Chocobos
Go into the Chocobo Farm, and into the barn, and then choose "Feeding Chocobos" Give your Great Female and Good Male 5 pieces of Sylkis greens each. Feed your Green, Blue, Black and Wonderful Chocobos 10 Sylkis greens each. Feed your Gold Chocobo 25 Sylkis greens if you want to race with him. (You don't need any more than that -- a chocobo's stats stop improving after a certain point, so 25 greens work just as well as 99. You might as well save your money.)

Racing your Chocobos at the Gold Saucer
First, go to the Chocobo Square. Talk to Ester, and then race your Great Female and Good Male to B class. Race your Black, Wonderful, Green, and Blue Chocobos to A. Always race the short race, and you have to race 3 times and win before you go up a rank.

There are 4 Classes: C Class, B Class, A Class, and S Class. S Class should only be attemped to be gained using a Gold Chocobo because you'll waste your money giving lots of Sylkis greens to the other chocobos, which are weaker than a gold

Chocobo Combinations
Great Female(B Class)+Good Male(B Class)+Carob Nut=Green Chocobo
Great Female(B Class)+Good Male(B Class)+Carob Nut+Luck=Blue Chocobo OR
Good Female(B Class)+Great Male(B Class)+Carob Nut=Blue Chocobo
Blue Chocobo(A Class)+Green Chocobo(A Class)+Carob Nut=Black Chocobo
Black Chocobo(A Class)+Wonderful(A Class)+Zeio Nut=Golden Chocobo

(Remember to Keep in mind you have to have 2 chocobos of the opposite sex to mate)
You can get a Green Chocobo from 2 Gold S-Class chocobos with a Carob Nut. You don't really need a Green if you have two Golds already, but just so you know.
It also looks like you can receive a Blue Chocobo by mating a Great Female and Good Male, and a Green Chocobo by mating a Good Female and Great Male. It's the exact opposite of the results I got. It's also possible to get another Black Chocobo from the Black and Wonderful combination. Don't worry. Just wait a while and try it again -- you might get the Gold the next time around.


Waiting for Chocobos to mature
The worst part about raising chocobos is that you have to wait for the chocobos you have to mature before you can mate them. The best way to waste your time is to go to Mideel with an Apocalypse (If you have one) and try to gain expierence and money. If you have a blue or a black, you can get a "Quadra Magic" materia in the cave on the north-eastern claw shape of Mideel. You can get a "Mime" materia on the Wutai island, on the east side of it. The cave is on a peninsula sticking out. You can get a "Hp<=>Mp" materia north of North Corel. With a black or green chocobo you can go to the waterfall on the Western continent and talk to Lucrecia with Vincent in your party. Go there on Disc 2, and 3 to get Chaos (Vincent's Level 4 Limit Break) and Death Penalty (Vincent's Ultimate Weapon).


Getting the "Knights of Round" materia with a Gold Chocobo
Go to the north-eastern part of the map with the Highwind to find an island with mountains on the rim, and forests inside so you can't land. Go back to the Goblin Island and then you can go to the KOR island with the Gold Chocobo you have. Test KOR on a Chocobo and get frustrating results.

Breeding Chocobos for Power and Performance
