LEAN MEAN BRAN MUFFINS

Seratonin is the brain chemical respsonsible for the feeling of 'satiety", so pumping up one's seratonin may help people shut the refrigerator.

A key ingredient for seratonin is the amino acid "Tryptophan".Perhaps you've heard that tryptophan is a sedative.  A few years back there was a big market f?o?r tryptophan supplements. Then some people got sick from taking supplements from a contaminated batch.
The FDA over-reacted by banning it from health food stores. But the FDA can't ban tryptophan in foods.


That's where the Lean Mean Bran Muffins come in.
They provide plenty of tryptophan to support seratonin synthesis in the brain which helps you get the message that you're full.

This recipe requires that you have access to evening primrose plants. Before starting the recipe collect some evening primrose seeds. Store them in the refrigerator and just before making the muffins, then grind them in a spice mill or  coffee grinder.

2 ounces organic bran flakes
1/4 Cup Walnut pieces, sunflower seeds or b?oth?
1/4 Cup Raisins or dried cherries
2 Tblsp Evening Primrose Seeds, ground
1 Cup (4.5 ounces) Organic Whole Grain Flour
2/3 Cup (2 ounces) old-fashioned Rolled Oats
1/2 Cup (2.5 ounces) Stone Ground Organic CornMeal
1/2 Cup Natural Sugar (Sucanat, Molasses or Turbinado Sugar
1 1/2 Tsp Cinnamon, Apple Pie Spice or Pumpkin Pie Spice
2 Tsps Aluminum-free Baking Powder
3/4 Tsp Baking Soda
1/4 Tsp Sea Salt
1 Apple or Pear, chopped
1 Cup Low-fat or Non fat Organic Buttermilk
1 large Organic Egg
3 Tblsp cold pressed unrefined Sesame oil
Sesame Seeds (optional)


Preheat the oven to 475 degrees. Place the rack in the center of the oven.
Line a 12 cup muffin pan with paper muffin cups. For best results do not use a non-stick mu?ffin pan without paper liners..
Wash your hands, cru?sh the bran flakes into small pieces, not crumbs.
In a small bowl, mix the bran flakes with the walnut pieces, raisins or cherries and Evening Primrose seeds. Set aside.
In a large bowl, stir together ?the flour, oats, cornmeal, sugar, baking powder, seasalt, baking powder, soda and spices. Add the bran flake mixture and stir together.
Place the apple or pear, buttermilk, egg and oil in a blender or processor and process until coarsely pureed. Fold the fruit mixture into the flour? mixture, stir gently to com?bine.
Fill the muffin cups to the top and sprinkle the tops with the sesame seeds. (if using)
Place pan in the center of the oven and immediately reduce the temperature to 375 degrees. Bake for 20 to 25 minutes or until the muffins are lightly browned  and firm to the t?ou?ch.
Let cool in the pan for a few minutes,then place them on a rack to  cool completely.
Serve within 24 hours or store in an air-tight container in the freezer..


Note:
Dark Red fruits and vegetables are high in bioflavonoids. Blackberries, plums, cherries, grapes and rosehips are richest in flavonoids.
