Bread Sticks, Bagels and Pretzel Recipe
1        package of yeast
1/4    cup of warm water
1/4    cup of butter
1 1/2 tablespoon sugar
1/2     teaspoon of salt
3/4    cup of scalded milk
1       egg, separated (reserve egg yolk)
3 3/4 cups flour
Dissolve yeast in warm water for 5 min. Add butter, sugar and  salt to milk, when lukewarm add yeast, beaten egg white  (very fluffy) and flour.  Mix with heavy-duty mixer.  Knead for 5-7 min., place in a well greased large bowl, turning once,  cover with tea towel and let rise until doubled(about 1 hour).

FOR BREADSTICKS:
Roll pieces of dough in size and shape of a pencil.  Place on floured cookie sheet, brush tops with egg wash (made with the reserve egg yolk and water), sprinkle with kosher salt or a seed, such as caraway.
Bake @400 for 15-20 min.


FOR BAGELS AND BREADSTICKS:
Pinch off pieces of dough, roll dough  to about the width of a finger and twice as long tapering at the ends.  Shape into rings or pretzels, pinching ends together well.  Let stand on floured surface until they begin to rise.  Drop into hot, not
boiling water 1 min. on each side.  Place on greased and sprinkled with a little cornmeal cookies sheets.  Add eggwash to pretzels, sprinkle with  kosher salt. 
Bake @ 400 until crisp for 15-20 min.
