The first thing to do is make sure your pallet is ready. Prepare your mouth by eating a dry bread, or light cheese bread, salty cracker or bland crumbly cheese. Now pour the wine about a third full, and note the color. It is there any? Should there be? Yes for Chardonnay and just hint of lemon or lime for Sauvigon Blanc. Reds should range from cherry, brick red and deep plum. Now swirl the glass to mix the air with it. This releases the aroma. Keep doing it as extra aromas might reveal themselves as tender little bouquets, like distant flowers. Can you detect on the nose the lime honeysuckle of Reilsing? Even the faint scortched butterscotch toffee of Chardonnay? Now it's time to drink, so take just enough to hold in your mouth for a few moments. Swirl it around your mouth and then swallow. Can you taste the jam boysenberries and coated cheeries of Pinot Noir? Can you taste the black peppered blackberries and toast of Shiraz? And now like the last story at night, comes the sweet warmth of the after finish- the length of the wine. Here are hints of walnuts, peaches, pears and even chocolate. Now your done with analysing this stuff, so drink and enjoy. Think no more.
